How does the 6600 connect to your PC?
The infosync website states:
Connection to desktop
- Docking station/Cradle No
- Cable No
Serial cable/cradle No/No
USB cable/cradle No/No
So I have to ask the question.....how does it connect to your PC? Surely not just by IR or Bluetooth?
why not? how x650 connects? 😮

If it is connected by Bluetooth and I say add a new contact to the phone while it is connected, will it auto-update my PC or will I need to manually press the sync button again?
Nokia's PC Suite doesn't, unfortunately, autosync; i.e., you need to sync "manually" by initiating the process on PC Suite.
Is there any other software out there which is better than the Nokia PC Suite?
Epocware has that software, and I don't know if it is better than Pc Suite, but who knows? Give it a try! It's PC File Manager
I accually think that there might be a possibility of starting a sync from the n6600. Looking through the manual (FCC Website) I think I saw screenshots with Sync icons!

That's the Remote Sync (SyncML) client that syncs with a SyncML server (if you have one) through the phone network.

I think Oxygen Software has a Manager for symbian devices in the works. The first version isn't good though. They are still adjusting with Symbian I guess.
