Anybody know how I can keep the display light on when the phone is sitting in its cradle with the power supply plugged in?

which light are you talking about?
Assuming you mean the backlight, then go to the control panel, select Display, and then three tabs over you have the Power section. Here you can change the Light from Auto to On.
I haven't yet found a way of getting this to happen automatically (though would be extremely interested if someone else has). It occured to me that I could create two Theme's. One with the backlight always on and another Theme with it set to auto. Then I could switch theme's to change them. However, as it would take just as long to switch theme's as it would to turn the backlight on myself, I've never bothered.
