Can anyone point me to a detailed mapping that says exactly what in Outlook 2000 contacts gets put in which fields on the 6600 and vica-versa?

Anyway, with a bit of work you can figure it out completely on your own, too: Create a new contact record on the phone, and fill in every detail field with unique data in each field, synchronize, a check in Outlook what ended up & where (and what did not end up anywhere).
Then do it vice versa: Create a new Outlook Contact and fill in every detail field with unique data, synchronize to the phone & check on the phone what ended up & where (and what did not end up anywhere).
