REQ: Serious backup and format/firmware upgrade

I've found some backup topics but not what I need.

I would like to backup on a file level! Copying folders and files to my pc. Not with backup software because I believe all of them are crap and backup files that I don't need.

-Address book
-SMS
-notes
-Wallet
-Calendar
-Todo
-Gallery files

NOT A PROBLEM: Calendar and Gallery files are easy to save I've found the sms folder that's also ok, I could save that.

What about the rest? What should I save?

I want to format my phone totally and upload a new firmware on it. Then restore the files on file level if that's possible.

Any suggestions/ideas? Thanks...

I would like to save the files from the nokia 6600 on a file level. I've found so many junk files In the system folder couldn't believe it! So I don't trust any backup software that it could save only the required files to be hones. I think it would save some system files as well [which I don't need].
