Does anyone know what the processor speed is of the Nokia 7710?

AFAIK it uses much of the same hardware components as the 9500, so the 7710 CPU should be clocked at ~150MHz too. But remember that it is not the clock speed alone that determines the speed of such a device.
what else except process determine mobile device speed? software, Ram (I can think of this one) what else ?
Processor type, internal architecture, DSP chips, memory handling, software etc., etc. There are A LOT of factors that all play a role in how the system runs, the MHz alone is not really that important. That's just what Intel wants you to think.
Major factors are cache and bus speed, as a processor is only as fast as the bus can feed it, especially with a small cache.
Most importantly is the software... you may have a fast processor, fast memory, but if the operating system is not properly optimised or poorly written, it'll be slow anyway.
Like the others have said, processor speed is only one factor amongst many that can affect a device's performance.

I played the same 3GP video on the 7710 and 9500 - and the result was it ran much smoother on the 7710 than on the 9500.
