How can I do to upgrade the Symbian OS on my N-Gage to an recent version??

You don't. All you can do is to have an authorized Nokia service center flash the phone with whatever is the latest firmware releases, but that'll mainly get you just small fixes (the original Symbian OS will still be 6.1 and the Series 60 release will still be 1.2).

The only way to get newer versions of Symbian/Series 60 is to buy a newer phone model that's based on such.
