As the 6600 is a mono sound phone, is it possible to plug in headphones... is there something available to buy? I mean, I've tried using a 3.5mm stereo to 2.5mm mono adaptor... and it kind of works. Sound goes through the headphones, but it also goes through the phones speakerphone! lol Anyway around this? (btw, the adaptor is too chunky to really be practical)

It might be easier to just buy the Nokia HDD-1 headset, it works perfectly on the 6600. It's obviously not a stereo sound though, as has been discussed often on this forum.
