can any one please tell me if the new 7710 can read excel sheet,word doc. (office doc. ) and if so can they be edited?

Yes they can, without any problems at all!
The built-in "Sheet" app can, for most parts. I don't know how completely (or not) it handles all Excel supported file formats, formulas, etc. Check out the phone's User's Guide from http://www.nokia.com/phones/7710 in case it has details (I haven't read it myself).
The 7710 can read simple Excel workbooks, but if u hav macros n all that, it WILL NOT be able to read it.
