Which s60 series phone has the best compatibility for s60 softwares?

Probably the Nokia 6600, although the 6630 is good too. Any Nokia Series 60 2.0 phone works with the vast majority of stuff after its been on the market a while (yes there are exceptions of course).

I personally think that currently the 6600 has the best compatibality for the most sw, 'cause it supports the apps for s60 v1 and v2. The later models like the 6680 ony supports v2 apps and not all of them are compatible with the new structures used with the latest symbian versions.
