I'm not absolutely sure what you are asking for, but...

If there is an SMS message center number on the SIM card, the phone picks it up and uses it automatically. Arriving SMS messages end up in the "Inbox" of the "Messaging" app on the phone. When you send messages, they are sent to the message center.

The message center you can change in the "Control panel" application (> Messaging > Text message).

On the inside display, when you open the "Messaging" application, you can also hit the "Menu" key and in the "Receive" menu open "SIM messages" to see messages received and stored on the SIM card (if any).
