Ocasionally, I would like to tape phone conversations, but find the proceedings cumbersome open the Communicator, go to Extras-Recorder, start recording. Does anyone know of/can think of a way to activate the recorder during a call without opening the Communicator? The tape symbol on the "1" key is very suggestive, but unfortunately it just rings your voicemail box.

Sorry to dissapoint you mate, but the 'tape' icon on the 1 button, is to show it's reference as a speed dial to your answerphone. Plus I'm not totally sure if the recorder will work when the phone is shut, I know it stops playing when closed.

Yes you can. Software called Dictaphone by psiloc will do this for you. The psiloc site seems to be down (english version), but you can get the demo version here;

Select utilities and look for External Dictaphone.
