I'm a new user of Symbian, and I want to know if is possible to move apps from the Tools > Applications menu to another folder, example the games to games and photo tools to Photo folder.
And another thing...
exists an application launcher for the mostly used one? or how do you have configured it?

On that phone, the Tools > Applications holds Java applications (so called midlets) and they can't be moved.
From the 6600 (Series 60 2.0) and onwards, they are no longer restricted like that and can reside and be moved anywhere like "native" Symbian/Series 60 apps written in the C++ programming language.
