U think u know Symbian??
I got this huge problem, i have a nokia 7610 and i wonder if u can Update the Symbian system to nokias 6680 Symbian system??
Because i just got a Headset from my m8 and he has a 6680, and when I put the headset into my 7610 it just says, "Dont Supportet"!
Is there any possible way to fix that problem???
And is there someway to play Mp3 though Headset on a 7610?

No, you cannot update the Symbian/S60 software to what's on the 6680.
All you can do is to update the 7610 software (firmware) to whatever is the latest revision, but it will still be always based on Symbian OS version 7.0s and S60 2nd Edition Feature Pack 1 (S60 2.1).
The 6680 is based on Symbian OS 8.0a and S60 2nd Edition Feature Pack 2 (S60 2.6).
So, if the 7610 doesn't support a particular headset, there is nothing you can do to change that (and it is unlikely that Nokia will, either; adding new features to an old device is not a thing phone manufacturers typically do).
You can play MP3's through the headset on a 7610, but the 7610 doesn't support stereo sound output (it is a hardware thing, too, so you can't change that either).

But there is just one more thing, when im using the Headset its playing on the phone at the same time, and when I turn the phone to Silent mode, its silent in the Headset! What can I do?, whats the point of making a phone with Mp3, and u can play it with a Headset, only in the phones speakers?

Why don't you use another mp3 player, instead of the buit in one? I have a 3230, but I listen music on the headset even on silent. Try to see if it works with an original headset 😉
