Pairing N73 and Sony Ericsson Bluetooth Headset

Not sure about the headset. With most, it's just a case of setting the headset into pairing mode and then allowing the phone to find it. Not knowing the headset device you are using, it's difficult for me to say. Try reading the headset manual for any clues.

As for firmware, key in *#0000# and you will be shown what firmware you are running.
