If you find a separate recorder app to install and use. With the built-in recorder it isn't possible, I'm afraid.

Yes unfrotunately this is only possible in S60 3rd Edition FP1 and above.
This software does the trick though. ALON MP3 Dictaphone
Record in MP3 too which is a nice plus.
