I have been trialing an e61 without a SIM card and there have been a couple things that are annoying. One, some programs (like AgileMessenger) require a SIM card; I can learn to live without that. The other thing, though, are the sound profiles: I can't silence that annoying beeping on every key press without a SIM card. Is there a way around this? It doesn't seem like the phone should need a SIM card to silence and change ring profiles.

I presume that you did turn the keypress sounds off for the profile you're using?

When looking at the Profiles, you have two choices: Personalize and Activate. While I can personalize the Profile, the changes won't take effect until I Activate. However, the Profile will not activate without a SIM card.
Is this correct? Why would you need a SIM card to change the volume profiles? I understand that it is a way to have your volume profiles travel from phone to phone, but it seems like you should be able to at least apply the current profiles without a SIM card.

I don't really understand what your problem is. Whenever you boot the phone without a SIM card, it boots in Offline mode and therefore uses the Offline profile (this is displayed at the top of the screen). If you go to the Profile application, you can personalize the Offline profile and set the Keypad Tones to Off should you wish to. It works as expected. There's no need to activate the Offline profile, it's automatically selected when the phone is offline.
