This is going to sound incredibly ignorant and stupid, but what exactly will the Wifi on this phone allow me to do?!

WiFi Questions
You can connect to any open wifi network (or secured if you know the key) and use it as your access point.
Once connected you can browse the net, download, make VOIP calls etc.
Basically anything your phone can do that requires an internet connection you can do over wifi. It is faster than 3G of course and won't incur any costs from your service provider (they aren't involved).
