May I know who are you here using a Mac and a Nokia phone?
I understand we can use iSync and some plug-in from Nokia to sync data (phone book and calendar) with a Mac.
However, is this possible that to upgrade phone's firmware or install new phone's applications as well by a Mac?

works fine for me. however if you sync the same phone with both a mac and pc then things can get a little messed up. (e.g. completed tasks in outlook become uncompleted!)
You can't upgrade the firmware on the phone in OS X, but it's possible to install Windows XP on an Intel mac with bootcamp to update the firmware.
As for installing applications if your mac has Bluetooth just transfer the .sis file to the phone or connect your USB cable to the phone and put it into mass storage mode. You can then copy .sis files to the memory card and run them from the phone's file explorer.
