when i have loaded applications on my phone and then want to get rid of them i then uninstall them.
where do they all go? is there some sort of recycle bin of something that needs to be emptied?

No they are just uninstalled. The files are deleted. I don't really understand the question unless it is just that simple

Technically they're still there until they are written over, like with a HDD the file system simply forgets something is there so next time the space is needed, it's written to. Your memory is a garage and it's full of china, if you forget it's there and you have a car that needs to go somewhere, you'll park it in the garage, running over all the china in the process.

well i just wondered if these old files were sat around taking up space somewhere.
I have an 80gb hard-drive on my computer with only say 30 gb left. I have very little in the way of vids, pics, and music etc on there and am sure that over the years all the old stuff that i have had on there and removed must be lingering somewhere. There certanly seems to be a lot of memory missing somwhere

Probably windows updates and various other files downloaded over time, if you've not checked it recently the temp folder can also harbour a lot of wasted space that isn't apparently taken up by anything in particular. If you don't know what i'm talking about i'd put my money on that taking up a large chunk of that space.
Most files leave permanant traces though whether written over or not, they don't normally take up room though as such. This is how the police can recover evidence from PC's years after a file has been deleted. Some undelete programs i've used have shown details on photos from 2003.
