I'm not even sure I buy this argument (though I agree it'll be interesting to see what the reality is). We're all basing this Apple Marketing. Personally I do expect things to be slick, but I do wonder about real world usage.
For example I don't see the difficult in going into Music Player and selecting the artist / album from a textual list. Cover flow may look good, but I for one don't have album art associated with all my music files (I know I could fix this).
The same could be said of two handed versus one handed.
The multi-touch stuff is very interesting and I expect to see more of this in future mobile device generally, but I still think that non-touchscreen devices will continue to dominate for a long time to come.
I do think Gallery needs work on S60 phones, and be interesting to see the performance of this component on the iPhone.
I guess this debate will run and run and run 😊 Should be fun!
