I have just noticed I keep losing a day on my phone. Every so often its a day behind. Im not sure when it does it, or how often as I dont usually check the date. However I notice when my work alarm doesnt go off, or goes off when it shouldnt (its set to go every workday and not weekends).
Ive tried it with network operator time set to auto update on, and off (Im not sure if that does the date anyway) but it still seem to drop a day at some point.
Anyone heard of this before on S60 V3? Any fix?

Never heard and seen (n95). Can it be PC Suite sync date when connected ? Just guess, never use it.
Good suggestion, but havent used it for yonks. Its the only bug Ive found in my phone, Im hoping its a simple software fix. The time itself stays fine, when it does go out it goes one day behind.
Do you have your phone setup to get time/date from your Network provider? Maybe their clock is buggered (like our Australian digital television broadcasters sometimes are... bastards!). Try it setup without that option for a while and see how you go (mine is setup without getting the time from the provider as Optus doesn't support this, and I have not seen this issue in the ~3months of ownership of this phone).
