Can Nokia's MAPs application be set to navigate in a 'heads-up' way? like the way other SatNav systems work. In other words so that the navigation runs the way you are driving forward.

It sure can. Press the left soft-key whilst navigating and select the 3d view.
When in navigation/route guidance mode it does run "heads up" (..both in 2D and 3D..).
It's only when your not having an active route guidance that it does not have "heads up" (and there is no option for that either).
