How do I set text messages to give me a delivery report, I cant seem to find that option.

I think the only difference may be the homepage; the Mobile Web one has a homepage for use with an HTML web browser, the WAP one has a homepage in WML, and the MMS one has the MMS gateway as the 'homepage'.

Use "Mobile Web". If you check the settings for each access point (Tools, Settings, Connection, Access Points, Options, Edit), you'll see that they work differently.
MMS is for, well, MMS messages. Mobile Web is for Web and e-mail access (and almost any other Internet-based service). WAP is usually charged by the minute, rather than data size. The only thing I've found it useful for is traffic updates on Navicore. The other access methods don't work for that.
