Bit of a long shot this one.
Is there any way to transfer applications between Series 60 phones by moving a folder within the phone using a file manager or similar?
Or even more unlikey, any S60 app that can do it for you?

No, you should always keep an copy of installation file for application.
I think only for Themes can
Put your Minisd card in card reader
<Memory Card>\private\10207114\import
P.s. If there is no \private folder ,enable ' show hidden Files and folders ' in Tools -> Folder Option (tab to view) -> Hidden Files and folders -> Show hidden files and folders
