I use Super by erightsoft to convert avi files into MP4's to view on the N95.
Am now considering moving from Windows to Linux.

Well, using Linux in general is a bit more technical compared to Windows. But if you look at the latest release of Ubuntu, they have come a long way. For me it's nearing the point where I would consider installing Ubuntu on my girlfriends laptop. All the things she needs to do will work just fine (e.g. browsing, chatting, mailing and some office tasks). And this will work out of the box on a clean installation.
But to answer your question, I don't think there is a next, next, finish installation available for what you want on Linux. Perhaps you should try a Live cd first. Download Ubuntu and burn it to a cd. Then just put it in your pc and boot from cd.
The utility is called MS Windows - something that majority of users are on. 😊 😊
This really isn't all that technical. If you are able to navigate a filesystem from a console i.e. using "cd" and "ls" (which is the Linux/unix equivalent of "dir" on Windows), you can do this.
After the first steps, which are to install the command for the first time, you basically find the file you want to transcode and type:
mp4ize <filename>
e.g.
mp4ize my_video.avi
All the rest of the technical looking stuff is output from the command - you don't have to understand it to use it 😊
There is even an explanation to add a 'right-click' command to Nautulus, the File manager. Much like Windows Explorer.
