do you have to switch this on, i was under the impression when you view a photo if you turn the phone to landscape the photo also turns but mine doesnt?

By default the N95 8GB's sensor (accelerometer) doesn't do much - when you take (not view) a photo it will auto-rotate the file it produces, but not much else. However, the forthcoming RotateMe application will allow you to do as you say - the screen rotates as you turn the phone. It will be free, but it's not out quite yet.
