Hi, I was wondering if anyone knows a about a good software to create my own gps maps for my N95?
Map making For N95 / symbian
For Garmin units (or in the case of the N95, Garmin Mobile XT) I use MapEdit and Global Mapper. These make it fairly easy to map out towns, add points of interest, street names, numbers, traffic flow and so on.
There are lots of commercial apps that do the same too.
Can you use this to change bought maps? Theres a few mistakes Id like to correct on mine.

Smart 2 Go maps are not publicly documented. While it is very likely possible to modify those maps, it's impractical and not worth the effort to reverse engineer given the prevalence and openness of other mapping systems.
If you want to have full control over your maps, then at this point in time Garmin is your best bet on the N95.

ArcView http://www.esri.com/software/arcview/ - another nice commercial application.
