If I have a N95 with o2 (for example), and I change the product code number, is that the same as actually unlocking the phone to be able to use a sim from another provider?

changing the product code will not unlock the phone as far as i know. I think you have to reflash the firmware to an unbranded one for that purpose.
No, in all cases. The network lock has to be removed by special equipment (which costs lots and lots of money).
Best bet is the network.
However I thought O2 usually give away handsets unlocked.
Try another sim card in, if it works, its unlocked. Just because a phone might have branding on it (either physically or in the software), does not always mean its network locked.
It's not for me.
I know someone who wants to unlock his N95. Not even sure what provider he is with.
