Actually got round to watching the online Samsung tutorial video and it mentions being able to create 'widgets' but can't fit an option for it on the phone.
Any ideas?

those widgets are for nokia not samsung
I watched it too and I'm guessing that the phone software shown in that tutorial is a more recent version than your (and my) phone shipped with. Hopefully we'll get this functionality in a firmware upgrade soon.
If the Samsung S60 based phone has the same S60 open source (Webkit) based web browser than Nokia, then the same widgets will work.
I just watched the demo and i also couldnt find the Widget menu. I have software version HH9 29-08-2008.
But if i use Y-Browser to open a file with an application there is an app called WidgetUI, but it doesnt work.
^I found the WidgetInstallerUI & WidgetMenu files under resource, but they are .rXXX not sis files
Web runtime (WRT) widgets are installed as .wgz files (really just .zip files).
