Subject line says it all.
Or, even better, is there an adaptor that will allow me to plug a standard set of headphones in (which would allow me to use my noise-cancelling pair).
Cheers.

You should be able to modify the hub of a standard headset and have a standard mini-jack socket in it, you could also have it fake "stereo" by having mono into 2 earphones, though there will be a small quality/amplification reduction.
I take it from the above, then, that the 9210 doesn't do stereo?
I deliberately didn't take apart my existing headset because it only provided mono sound -- if the 9210 can only do mono, I'll stick with my dedicated MP3 player.
nope there's only a mono output as it's a phone first and foremost. If a cunning person can figure out a way of reverse driving the mic input as an output you'll get stereo, but I doubt it's achievable. Mono does suck but then so do MP3s.
Personally I usually record mono onto minidiscs as then I get 2 and a half hours of quality music on a disc, as in most cases people ignore stereo effects these days.
