By default a new Meeting is created by long pushing the Calendar button on E66. Is there any way to change that? Can I create new To Do or appointment?

It's under Tools, Settings somewhere - I think it's the one-touch button settings, but I don't know what settings are available on your device.
You might also find some settings under Calendar, to let you specify what a new item should be - Meeting, To Do, Memo etc
