is there any way to add OFFICE (not quickoffice) and INSTALLATIONS folders
to application shortcuts or enabled applications?
i'd like to create a shortcut to open those, but unfortunately they do not appear under the list of applications / folders that can be chosen for that matter.

Do you mean , when several applications are open : LONG---Press Menubutton ? This enables Multitasking .
A different free Taskmanager is JBakTaskman , with 36 to set shortcuts .

nope, i mean the following: there is an option to set shortcuts on the main screen (on the main screens of the both modes). the list of the applications that can be bound to those shortcuts is found under "application shortcuts " menu.
when a new application is installed, it also appears there. the problem is that i wanna make shortcuts to OFFICE and INSTALLATIONS. but these are not listed...
