I am kind of confused what all those server names are in the SIP profile... Where do you get that information as far as which server to connect to, your SIP profile e-mail, and etc. And what does this do? Does it replace Skype or what?

This has nothing to do with Skype. The information you need to create the SIP profile should come from your VOIP provider. If you use some thing like Gizmo, you will find it on their website.

Yes, AT&T recently announced they will allow VoIP over their 3G network.
