Simple: You go to Nokia and ask them to give you all their source code for the firmware, with the required tools to rebuild the firmware, as well as the flashing tools. Then you remove the Maps app from the build configuration, rebuild the firmware and flash your phone with the new firmware image without Maps.
You could also get a job so that you can afford to pay for the toys you want, instead of having to steal them.
