I've just started looking into this subject, you might want to start here:

Sounds promising to begin with but the last post in the thread (currently) is along the lines of "my phone is now dead"....*gulp*
that's the caveat, LOL
cooked roms, as it's known in the WinMo world, is customised rom images, either adding or removing unneeded programs. usually has the effect of freeing up disk space and memory (for a proper cooked rom)
for e.g. the HX roms for the Samsung symbian phones.
..not to mention the phone comes fully 'hacked' i.e. all system drives available to user
i'm running one of the modified firmwares - and it is great - the phone response time is much better - crap removed from it - new maps built in + few other things - like useless input and display languages removed.
other good thing is after hard reset all this crap stay in the phone including rompatcher 😃 build into firmware 😃

and i did not make it myself - some 19 year old kid in "russ-land" did it.
know nothing how to do it - the only thing is that you have to use nokia editor to extract and pack the firmware files back
Where could one find details on this modified firmware if interested?

I have started researching this thanks to Jerm, but at the moment all is not clear to me, but I am sure it will be soon.
This will be a last ditch attempt to be happy with my N97.
If I can make it work smoothly without lockups, then I will be happy and not dump it for something that works better.

there is a huge list of changes there - you may use google translate to see if does wonders for u
one more think - i can give u unmodified firmware 21.0.102 for EUro variants
or with rompatcher installed
you will have to use JAF to flash it

What's the difference between v21.0.102 and my v21.0.0.045?
I will have to do some serious research on this to limit my chance of bricking my N97. 😮

That sounds like a CV (Country Variant) and not the generic Euro firmware.
What does this have or not have that the latest official firmware has?

i think you are wrong - 21.0.102 was released and then pulled back from NSU.
It is available from various paid websites for any variant. i personally have about 20+ country variants for this firmware.
Take your phone to a Nokia service centre and i bet they will flash it with 21.0.102 FW
Do you have to use Jaf?
I am used to using Phoenix, will that not work as well as Jaf?
Not used Jaf before and have heard many horror stories about Jaf.

phoenix will not work as it checks if the firmware is modified or not - it will not work. you have to use JAF

I only managed to flash it a couple of days ago and am still testing it but so far, it does seem very much slicker and responsive.
I installed v21.0.102 and have also installed spb shell and am getting used to that. I didn't go with the Russian firmware in case I misunderstood something as this was my first time using Jaf.
It seemed much slicker without spb shell, but even more so with spb shell.
