I recently purchased an E71 unlocked in the US. I didn't realize this upon purchasing the phone that the only languages offered are Spanish, French and English.
Is there anyway I could update the phone so that the language could be in German?

You need to change the product code to something used in a German speaking country (ideally do not use an operator customized/specific product code, but a generinc, open market/retail version) and the reflash the device with a firmware version for that product code.
