I set up a corporate mail for exchange account on a C7 and now no longer need it and want to delete it. There seems to be no way to delete the user name, password or server. Anyone know how to do so to stop the phone trying to connect to it and give me a message that it can't?

I had a similar issue. You should be able to open up your mail and go to options then settings. This should show you all the mailboxes currently available. A long press on the account you don't need should pop up the option to delete the mailbox.
